TASTING NOTES: The wine is light yellow colour. The fragrance is soft, nicely rounded with the aroma of peach, pineapple, lime blossoms. It has pleasant and harmonious acidity. It gives the taste of ripeness. The young wine was left lying on fine lees, which gives the wine pleasant sort harmony.
GRAPE PRODUCTION: The SiSi wine is eco-friendly produced. Integrated production is under professional supervision of Agronomic Service.
HARVEST: Warm summer, long and warm fall with cold nights was ideal environment for ripeness. The harvest was actualised from 7th to 10th October. Ripeness 22,0 bx, concerning an ideal balance of sugars and acidity. Hand-harvested and checked grapes.
WINEMAKING: After the harvest the grape berries were cold macerated for 12 – 24 hours. Fermentation held place in inox tanks with mixture of cultivated and indigenous yeast. After the fermentation it ripened for 3 months on fine lees. 20% aged in 2000l wooden barrels for 6 months.
SOIL: On the surface there is mixture of loam and sandy soil with enough humus, in the depth the ground is marl sandy geological structure of the ground. The vine grows at 300 to 400 metres above sea level. The slope is 10 – 20 %.
WINE and FOOD: It pairs well with white meat, poultry, veal, beef, vegetables with oil and vinegar.
